• Oven bake barramundi fillets to 350 degrees Fahrenheit, or 450 F if you plan on frying a whole fish. If you're frying fillets, position the rack in your oven so the fish will be about 4 inches from the heat before the broilers preheat.


• Prepare a baking sheet or dish by spraying it lightly with cooking spray, dabbing it with butter or oiling it lightly. You can also align your baking dish or tray with foil to make it extra easy to clean up.

• Season the fish. Keep it simple by sprinkling the barramundi with salt and pepper, or by making a simple lemon and butter sauce drizzled over the fish while it is baking. For a more complex dish, put an icing, brush on your barramundi, and, halfway through, fry it. • Bake your barramundi fillets in a bowl, covered with foil, for about 25 minutes, or until the meat is white and slightly flaky, while inserting a fork or knife into the thickest part of the fillet. If you're frying a whole fish, you can leave your baking dish uncovered and fry for about 15 to 20 minutes. Grill the barramundi, about eight minutes for each inch of thickness. Brush with glaze after three to five minutes if you use it, then fry for about 5 minutes.
